Foodie Tuesday – comforting coffee cake

I made this coffee cake for the first time on Saturday as a late birthday present for my OH. I can’t take credit for the recipe as that belongs to the beautiful Pearls & Poodles, who blogged about it here.
I have just a few things to add having now made the cake:

I used 2.5 tablespoons of coffee but that wasn’t enough, I could hardly taste it, so next time I’m going with four or perhaps even five. Also, next time I will use more vanilla essence. Obviously this is a taste thing, but just thought I’d mention it.
Make sure you have quite deep cake tins. Mine aren’t, hence the mixture fought for room and I think that could be why it was a little heavy.
Also, it was the first time I’d used my new Russell Hobbs super duper everything maker (it has a liquidiser attachment and you can buy a mincer attachment for it, though after having watched a certain episode of Grey’s Anatomy last week I don’t think I’ll be chancing that particular item). Anyway, the point is that I am still getting used to the machine and may not have used the best mixer/beater attachment for the cake, which may have contributed to the slightly heavy texture.
As for the chocolate butter cream filling – it is lush, the best I’ve ever made, but there was way too much of it. I let Dot fill the cake and didn’t realise quite how much there was until I came to cut it, otherwise I’d have used some to top cup cakes or something. If you’re any good at adjusting quantities (which I’m not) you may want to make up less of this as also, it is very rich and a little really does go a long way.

 

The main thing is though it is delicious. And easy to make.  And delicious. It is definitely now in my baking repertoire.

Ingredients:

For the cake
8oz caster sugar
8oz soft butter
4 medium free range eggs
9oz self raising flour
Capful of vanilla essence
2-3 tbsp ground coffee

For the chocolate butter cream
6oz butter
10oz icing sugar
2oz cocoa powder




To make the cake:
1. Grease and line two cake tins and pre-heat the oven to 160°C.
2. Combine the butter and sugar and mix thoroughly until smooth and fluffy.
3. Add the eggs, flour and vanilla essence and whisk together.
4. Brew the ground coffee with an equal measure of hot water; add to the mixture and blend together before dividing equally between the two baking tins.
5. Using a spatula, gently smooth the mixture out to the edges of the tins, so it is even and you are left with flat tops.
6. Bake in the oven for 20-25 minutes. Use a skewer to check the cakes are cooked properly. If the cakes are golden brown and the skewer lifts out clean, they are ready.

To make the butter cream:
Mix the butter, icing sugar and cocoa in a bowl until thoroughly combined – it should be a uniform colour, not streaky. The butter cream should be soft and glossy; if it’s too thick then add a little milk and mix again.

When the cakes have cooled, spread the butter cream evenly over one of them, then gently place the other cake on top. You can eat it as it is, dust a little icing sugar over the top to finish, or use some of the butter cream to decorate.

Foodie Thursday – Canapés: the recipes

Fennel-marinated feta and olive skewers

As this recipe tastes so fresh and clean, it will work well with richer dishes. It makes a delicious vegetarian option.

Makes 20

Ingredients
2 tbsp sesame seeds
200g feta cheese
1 tbsp fennel seeds
Grated zest of 1 lemon
1 tbsp lemon juice
2 tbsp olive oil
11⁄2 tsp cracked black pepper
15g mint, finely chopped
1⁄2 cucumber, peeled and seeded
20 mint leaves
10 pitted black olives, halved
Essential equipment
20 wooden skewers (5cm)
1 Toast the seeds in a dry pan over low heat until nutty and golden, 3 minutes. Cool.
2 Gently rinse the feta in cold water. Drain on paper towels.
3 Cut the feta into 2cm cubes. Toss the feta together with the fennel, toasted seeds, lemon zest and juice, oil, and pepper to coat each cube well. Cover and refrigerate for 4 hours to allow the flavours to combine.
4 Sprinkle the feta with chopped mint and toss to coat each cube well.
5 Cut the cucumber into 20 cubes (1cm).
6 Thread 1 mint leaf, 1 olive half, 1 cucumber cube, and 1 feta cube onto each skewer. Serve chilled or at room temperature.

Get ahead: Marinate the feta up to 3 days in advance. Store in an airtight container in the refrigerator. Skewer the feta up to 4 hours in advance. Cover and refrigerate.


Classic cheese quesadilla with green chilli, coriander, and avocado salsa

These are simple, versatile and fun party or picnic food. Serve with fresh salsa, avocados, limes and tomatoes.
Makes 24
Ingredients
For the salsa
2 ripe avocados
1⁄2 red onion, very finely chopped
1⁄2 red chilli, seeded and chopped
Juice of 1 lime
Salt and freshly ground black pepper
1 tbsp olive oil
Dash of Tabasco sauce, or to taste
For the quesadilla
4 flour tortillas (18cm)
175g grated Swiss Gruyere cheese
30g coriander, finely chopped
1 bunch spring onions, trimmed and finely chopped
1 green chilli, seeded and finely chopped
Salt and freshly ground black pepper
Olive oil
Essential equipment
Large non-stick frying pan
Fish slice or palette knife
1 For the salsa, skin and stone the avocado. Finely chop or mash the avocado with the remaining ingredients and taste for seasoning.
2 Place 2 tortillas on the work surface. Divide the cheese, coriander, spring onions, chilli, and salt and pepper evenly between them. Press the 2 remaining tortillas on top to make a sandwich.
3 Heat a large frying pan with a drizzle of oil. Sear tortilla sandwiches over medium heat, 2–3 minutes on each side, or until light golden in colour and crisp. Flip with a fish slice or a palette knife.
4 Cut each quesadilla into 12 wedges and serve with avocado salsa.
Get ahead: The quesadillas can be made several days ahead, covered, and kept in the refrigerator until you need them. You can fry them and keep warm in a low oven to serve to your guests.

Foodie Thursday – Canapés review

Now we are in autumn, and celebrations such as Bonfire Night and dare I say it, Christmas, are on the horizon, the publication of this recipe book is well timed.

Canapés is a cornucopia of party nibbles, savoury and sweet. It’s a great looking book, full of gorgeous photographs and it is hard backed, so it’s hardwearing, something I think is essential for a cookery title.

I’ll say it now – I love canapés. We have a tradition every Christmas Eve in our house of party food for tea. It’s decadent, rich and you can experience lots of different flavours at one go. Normally, I admit, I buy my feast from a combination of Marks & Spencer, Tesco, Sainsbury’s and Asda, but this year I’m going to have a go at cooking up a few nibbles myself.

With more than 200 recipes to choose from I’ve already marked out a few favourites, two of which I’ve reproduced in my next post, with kind permission of the publisher. I’ve chosen easy dishes, as I’m no chef and let’s face it, won’t have lots of spare time on Christmas Eve!
For the more adventurous among you there’s clams with ginger and lime butter; monkfish, pancetta and rosemary spiedini with lemon aioli; classic fish goujons; quail egg and crispy bacon croustades; sweet potato and ginger rosti with coriander pesto; smoked haddock and parsley cakes; spicy pork empanaditas with chunky avocado relish and triple chocolate biscottini with hazelnuts.
My mouth is watering.
There’s also heaps of help in the form of menus, how many canapés to allow per person, drinks to accompany the food, and presentation tips.
